Our 2 year old son, Anthony Gerardi Jr., was diagnosed 9 months ago with a disease called Eoisnophilic Esophagitis (EoE). EoE is characterized by a high number of eosinophils, a type of white blood cell, that accumulates and causes inflammation and damage to the esophagus, affecting the ability to eat. Current statistics estimate that 1 in 2000 people have EoE. Treatment depends on the severity of the inflammation and damage and can include steroids, elimination of some foods, or elimination of all foods, with nutrition being provided by an elemental diet (an amino acid formula).
